To respect the vine

Like life, wine is shaped by encounters.
Encounters that forge character, guide our path, and give meaning.
The vine draws its strength from deep within the earth, and passes it on to its fruit. Through the grapes, the terroir speaks and we are committed to letting its voice be heard.
The wine we craft is the expression of an alchemy between soil, climate, plant, and human care.
That’s why we cultivate them with the utmost respect.
We use organic soil amendments, gently work the land, and plant cover crops in selected plots to protect the soil’s life and structure.
We also adopt eco-friendly methods to manage pests and diseases, minimizing our environmental impact.
Committed to sustainable viticulture, we strive to preserve natural balance and the precious biodiversity that is essential to the vitality of our vines and the lasting expression of our terroir.

Oak barrel aging to reveal the depth and soul of our wines

The choice of oak barrels is a commitment — one to time, natural breathing, and subtle transformation.
All our wines are vinified in oak barrels, to reveal their complexity and specificity.
We use barrels of varying sizes, origins, and ages to bring out aromatic profiles and enrich our blends.
As soon as pressing is complete, the must is transferred to barrels, where fermentation begins naturally thanks to indigenous yeasts. The wines are then aged on fine lees for 6 to 8 months, with “bâtonnage” (lees stirring) tailored to the profile of each vintage.
Malolactic fermentation occurs naturally, depending on the vintage. The wine is not filtered. We intervene as little as possible to allow it to express itself freely.
After bottling, each cuvée continues its evolution in the cellar for 3 to 5 years for non-vintage wines, 7 to 10 years for vintage cuvées.
This slow, controlled aging process allows our wines to fully blossom, resulting in cuvées of great depth, ready to reveal all their richness at the moment of tasting.

At the heart of our cellar

Our winery houses around 250 oak barrels, most of them with a capacity of 228 liters, and some up to 600 liters.
We use noble, century-old wood dense and aromatic perfectly suited to accompany the vinification of our wines with finesse and subtlety.

Some of our barrels come from a local cooperage based in Hermonville, Tonnellerie de Champagne, with whom we maintain a close relationship in selecting the wood.
This artisanal cooperage holds the Entreprise du Patrimoine Vivant (Living Heritage Company) label, a mark of excellence awarded to French craftsmen and businesses that preserve traditional savoir-faire. It is a guarantee of quality and tradition.
