VINIFICATION
- Grapes blended at pressing. Separate vinification: First press (tête de cuvée) in old 600L demi-muid, Heart of cuvée in 400L barrels and Final press in 228L barrels. Final blend varies each year according to wine profiles.
- Fermentation in old oak barrels with indigenous yeasts
- Malolactic fermentation almost always occurs
- 8 months barrel aging, 5 years on lees in bottle, then 1 year post-disgorgement
- Bottled in “special” bottle in June 2019
- Disgorged: April 2025

- Traditional cork, “fleur” quality, 3-disc type
