VINIFICATION
- Fermentation in old oak barrels (8 years and older) with indigenous yeasts
- Natural malolactic fermentation, nearly systematic
- Aged for 8 months in barrels with bâtonnage, 5 years on lees in bottle, then 1 year after disgorgement
- Unfiltered
- Bottled in “special” bottle in June 2020
- Disgorgement: June 2025
- Dosage: 2.5 g/l
- Traditional cork, “fleur” quality, 3-disc type
