VINIFICATION

  • Fermentation in old oak barrels (8 years and older) with indigenous yeasts
  • Natural malolactic fermentation, nearly systematic
  • Aged for 8 months in barrels with bâtonnage, 5 years on lees in bottle, then 1 year after disgorgement
  • Unfiltered
  • Bottled in “special” bottle in June 2020
  • Disgorgement: June 2025
  • Dosage: 2.5 g/l
  • Traditional cork, “fleur” quality, 3-disc type
