VINIFICATION
- Separate vinification, then blending in the same proportions as planted in the plot
- Fermentation in old oak barrels (5 to 8 years old) with indigenous yeasts
- Natural malolactic fermentation may occur depending on the year
- Aged 8 months in barrels with bâtonnage, followed by 5 years on lees in bottle, then 1 year post-disgorgement
- Bottled in “special” bottle in June 2020
- Disgorged: June 2025
- Dosage: 3 g/l
- Traditional cork, “fleur” quality, 3-disc type
